Berry Oat Breakfast Bars                                                              Recipes

Similar to a berry cobbler, this recipe blends the hearty flavor of our gluten-free, organic  rolled oats with sweet berries to make a breakfast side dish that can be eaten all day.

​

Breakfast bars are a quick snack you can take on the run or you can snuggle up with a warm blanket and your favorite morning beverage and enjoy this more like a cobbler.

​

Either way, these Berry Oats bars are a great way to use your favorite fresh or frozen berries and healthy rolled oats to feed your family.

Ingredients

​

Oat Mixture:

  • 2 c. Rolled Oats (gluten free - organic where needed)

  • 1 1/2 c. all purpose flour

  • 1 c. granulated sugar

  • 1 tsp. baking powder

  • 1/2 c. softened butter

  • Water (if needed - we use maybe 1/4 c.)

 

Filling: 

2 c. mashed berries

*You can make this into more of an actual filling by adding sugar, lemon zest, etc. or just use the berries plain - both taste great.

 

Directions:

  • Pre-heat oven to 350 degrees F

  • While the oven warms up, mix the oat mixture ingredients together - if a bit dry, add some water a little at a time until it holds together.

  • Add 3/4 of the mixture to the bottom of a 9x9 baking dish and press it down.

  • Add your favorite berries.

  • Sprinkle remaining 1/4 of oat mixture on top.

  • Bake @ 350 degrees F for 1 hr.

 

*If you can resist it, the longer you let them cool the better they will form together as bars - if you simply MUST eat them right out the oven, enjoy them with a scoop of vanilla ice cream for more of a crumble variation!

 

*Easily substitute whatever berries/fruit/filling you’d like - we used blueberries and strawberries for this one - it’s also really good with raspberries!
