Sourdough - Cinnamon Burst

Sweet n Sour-dough using bakery-grade cinnamon chips. Soft texture with a sweeter/mild sourdough taste.

Back in the day when I was in the bakery, this was always a favorite bread for Fall. A combination of sweet and mildly sour flavors with a soft texture.

Ingredients                 Weight

3 cups flour                     400g - 100%

1 ½ cup water                  300g - 75% hydration

1 ½  tsp salt                     8g -     2%

½ cup starter                   100g

¼ cup cinnamon chips    50g

1 TB butter                       10g

For this recipe you will do the following:

• Mix all the ingredients at once.

• Knead the dough.

• Let the dough rise till double in size. 

• Shape the loaf into the pan.

• Let the dough rise in the pan.

• Bake the loaf
