About Khorasan Wheat

Khorasan wheat is an ancient grain known for its rich flavor and beautiful golden color. Many bakers love it for the slightly buttery taste and tender texture it brings to breads, cookies, and other baked goods.

You may have seen KAMUT® flour in stores. KAMUT® is a trademarked brand of khorasan wheat, not a separate grain. While the grain itself is khorasan wheat, KAMUT® refers to a certified brand grown under specific standards.

Our Khorasan Mills White All-Purpose Flour is milled for everyday baking performance, making it a practical choice for cookies, muffins, quick breads, and more.

Khorasan Mills White All-Purpose Flour 3 cups ~435 g
3 cups Khorasan Mills White All-Purpose Flour
Baking Powder 1 tsp 4 g
1 tsp baking powder
Baking Soda 1 tsp 6 g
1 tsp baking soda
Salt ½ tsp 3 g
1/2 tsp salt
Butter, softened 1 cup 226 g
1 cup softened butter
Brown Sugar 2/3 cup ~135 g
2/3 cup brown sugar
Granulated Sugar 1 cup ~200 g
1 cup granulated sugar
Eggs 2 large ~100 g
2 large eggs
Vanilla Extract 2 tsp ~10 g
2 tsp vanilla extract
Chocolate Chips 1.5 cups ~255 g
1.5 cups chocolate chips

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cream the butter and sugars. In a mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 1–2 minutes.
  3. Add eggs and vanilla. Mix in the eggs and vanilla extract until fully incorporated.
  4. Combine the dry ingredients. In a separate bowl, sift together the khorasan flour, baking powder, baking soda, and salt.
  5. Mix the dough. Gradually add the dry ingredients to the creamed mixture, mixing until everything is incorporated.
  6. Fold in the chocolate chips. Stir gently until evenly distributed throughout the dough.
  7. Scoop the cookies. Drop roughly 2-inch balls of dough onto a baking sheet, leaving space between each cookie. No pressing or shaping needed.
  8. Bake for 10–12 minutes, until the edges are just lightly golden.
  9. Cool. Remove the cookies from the baking sheet immediately and cool on a rack.

Helpful Tips

  • Use properly softened butter for the best creaming and cookie texture.
  • Avoid overmixing once the flour is added; mix just until combined.
  • Pull the cookies when the edges are lightly golden for softer centers.
  • Cool on a rack so the bottoms do not continue baking on the hot sheet.

Optional Variations

  • Add chopped walnuts or pecans for extra crunch.
  • Use a mix of semi-sweet and dark chocolate chips.
  • Sprinkle with flaky sea salt after baking.
  • Try white chocolate chips for a sweeter variation.

FAQ

Can I substitute khorasan flour in other cookie recipes?

Yes. Khorasan white all-purpose flour works very similarly to conventional all-purpose flour in many cookie recipes, making it a simple place to begin baking with ancient grains.  For best results increase your recipes liquid by 5-10%.

Why do the cookies still look soft when they come out of the oven?

That is normal. Cookies continue setting as they cool, and removing them while the centers are still soft helps create a better final texture.
