WHITE KHORASAN CINNAMON ROLLS

There are not many things that change the environment of your kitchen as does the smell of warm cinnamon rolls. With the aroma of sweet cinnamon and soft baked bread, cinnamon rolls are the ultimate comfort food. This recipe makes not just good cinnamon rolls, these are amazing cinnamon rolls. If there was such a thing as a healthy cinnamon roll, this would be it. Using ancient grains like Khorasan and natural ingredients like honey, each ingredient has a purpose and adds to the flavor, texture and color. The end result - light, fluffy cinnamon rolls with great flavor!

Cinnamon Roll Dough

4 1/2 - 5 c Khorasan White all-purpose Flour
1 c scalded milk (cooled to warm)
1 c water
2 tsp instant yeast
2 eggs
2 tbsp honey
2 tbsp butter
1 1/2 tsp salt

Cinnamon Filling

2 c brown sugar
2 tbsp ground cinnamon

2 tbsp butter

Cream Cheese Frosting

4 oz cream cheese

3/4 c powdered sugar

1/4 c softened butter

2 Tbsp milk or cream

Directions

Using a mixer or by hand, add all Cinnamon Roll Dough ingredients together (remember to cool the scalded milk). Mix/knead until all ingredients come together and dough begins to become elastic and smooth (about 4-5 minutes). Let dough rest for 10 minutes - the dough will relax and become very soft. Knead for another minute or so, then cover the bowl with either a towel or plastic wrap and let the dough rise until doubled in size (about 60 minutes).

Once the dough has risen, pour a bit of oil on your work surface and spread it out with your hands. Take the dough from the bowl, place it on the counter and stretch it gently left and right. Roll the dough with a rolling pin into an 18 inch square (dough should be about 1/8-1/4 inch thick).

For the filling, melt 2 tbsp of butter and spread over the rolled dough. Combine the brown sugar and cinnamon well, and sprinkle generously over the dough leaving about 1/2 inch bare on all sides. Don't be afraid to pack on the cinnamon mixture, you want great cinnamon flavor! Roll the dough, keeping the roll as tight as you can. Cut the rolled dough into 12 equal sized pieces. Place the cinnamon rolls onto a greased 12 x 16 baking sheet (or use parchment paper). Cover and let rise again until light and fluffy (30-60 minutes, depending on the temperature of your kitchen). Bake the at 340 degrees Fahrenheit for about 20 - 25 minutes, until golden brown.

 

Mix the frosting ingredients together until very smooth. Spread over warm cinnamon rolls.
