This banneton is made from natural rattan cane and includes a cloth liner. With a 7" diameter this proofing basket is our favorite for small-medium sized loaves (ideal for a 400g loaf!) or flours with weaker gluten structure such as einkorn and khorasan. The deeper bowl and smaller diameter help to provide good structure and shape to minimize spreading in your final baked goods.
